Carrot & Ginger Salad

Ingredients

  • 2 tablespoons sesame seeds, lightly dry roasted
  • 3 medium carrots, coarsely grated

Dressing

  • ¼ cup fresh lemon juice
  • 1 dessertspoon peanut oil
  • 1 dessertspoon sesame oil
  • 3 teaspoons finely grated fresh ginger
  • 4 teaspoons palm sugar (or brown sugar)
  • Freshly grated black pepper

Directions

  1. Combine all the dressing ingredients thoroughly and pour over the salad ingredients.
  2. Toss to combine.
  3. Try with grilled or cold meats.
