StarterS  VeGetAriAn MineStrone Soup

               An easy to prepare soup, excellent for chilly days!

               Preparation time 15 minutes ■ 40 minutes cooking time
               Adapted from Genius Kitchen

               Ingredients for 4-6 servings             Heat a large pot over medium-high heat.

               1 Tbsp extra virgin olive oil            Add oil and onion and saute, stirring occasionally,
               3/4 cup chopped onion                    until lightly browned, about 4 minutes.
               3 cups water                               Add all remaining ingredients to the pot except the
               2 cups diced zucchini                    pasta and bring to a boil.
               1 cup peeled and sliced carrots
               1 cup canned (rinsed and drained)        Reduce heat, cover and simmer on low heat for 25
                   cannellini beans                     minutes, stirring occasionally.
               3/4 cup diced celery
               2 Tbsp finely chopped fresh basil        Add pasta and cook according to package directions
               1/4 tsp dried oregano                    until pasta is al dente (approximately 10-12
               1/4 tsp salt
               1/8 tsp freshly ground black pepper      Serve hot.

                  choice (ditalini or elbow work
