               A modern, healthier version of the traditional beef meatloaf – lighter but still

               Preparation time 15 minutes ■ 60 minutes cooking time
               Adapted from Ellie Krieger

               Ingredients for 8 servings               Preheat the oven to 350 degrees F.

               3/4 cup quick-cooking oats               In a small bowl, stir together the oats and milk and
               1/2 cup nonfat dairy-free milk           allow to soak for at least 3 minutes.
               1 medium onion, finely chopped           In a large bowl, combine all the ingredients except
               2 pounds lean ground turkey              the tomato sauce. Mix just until combined.
               1/2 cup orange or red bell pepper,       Transfer the mixture to a 9 x 13-inch baking dish
                   seeded and finely chopped            and shape into a loaf about 5 inches wide and 2
               2 large eggs, beaten                     inches high. Pour the tomato sauce over the meat-
               2 tsp Worcestershire sauce               loaf.
               1/4 cup ketchup                          Bake for about 1 hour or until an instant-read meat
               1/2 tsp salt                             thermometer inserted into the center registers 160

               1 8-oz can no-salt-added tomato
                   sauce                                Remove from the oven and let rest for 10 to 15
                                                        minutes before slicing.
